Spring Greens Frittata

Ingredients

  • 8 eggs

  • 1 cup chopped zucchini

  • 1 cup chopped asparagus

  • 1 cup baby spinach

  • ½ cup peas

  • ½ cup feta (optional)

  • Salt, pepper, and a squeeze of lemon

  • Olive oil for the pan

Method

Sauté zucchini and asparagus until tender. Add peas and spinach until wilted. Whisk eggs with salt, pepper, and lemon. Pour over the vegetables, add feta, and cook on low until almost set. Finish under the grill until golden.

How to use it all week

  • Pair with toast or fruit for a quick breakfast

  • Add to a salad for an easy lunch

  • Serve with roasted veg for a simple dinner

  • Cut into cubes for a protein‑rich snack
