Lychee Sunset Mocktail

Sweet, floral and sparkling with a citrusy kick, this mocktail tastes like a tropical getaway in a glass. A great alternative to winding down in the evening instead of reaching for wine.

Serves: 1
Prep time: 5 minutes

Ingredients

  • 4-5 canned lychees
  • 30 mL lychee syrup (from the can)
  • Juice of ½ fresh lime
  • 30 mL fresh pineapple juice
  • 3–4 fresh mint leaves
  • Ice
  • 150 mL soda water or sparkling mineral water
  • Dash of grenadine (optional)

To Garnish

  • Fresh mint sprig
  • Lime wheel
  • Whole lychee (or skewered lychees)
  • Edible flowers (optional)

Method

  1. In a cocktail shaker (or jar with a lid), muddle the lychees and mint together.
  2. Add the lychee syrup, lime juice, pineapple juice and a handful of ice. Shake vigorously for 15–20 seconds until well chilled.
  3. Strain into a tall glass filled with fresh ice.
  4. Top with sparkling water and stir gently.
  5. For a beautiful sunset effect, slowly pour a dash of grenadine down the inside of the glass—it will settle at the bottom before naturally swirling through the drink.
  6. Finish with a mint sprig, lime wheel, edible flowers and a skewered lychee.

Quick Tip

  • Freeze whole lychees to use instead of ice cubes: they'll keep your drink cold without watering it down.
