Sleepy‑Time Cherry & Ricotta Stuffed Sweet Potato

A cosy, calming evening recipe created with foods that may help support better sleep like tart cherries (a natural source of melatonin), ricotta (rich in tryptophan), sweet potato (magnesium + slow‑release carbs), beans + seeds (fibre diversity + minerals), and walnuts (melatonin + healthy fats). It’s warm, soothing, gut‑friendly, and gives you ~20g protein per serve without feeling heavy. This recipe makes one serve.

Ingredients

  • 1 medium sweet potato

  • ½ cup ricotta 

  • ⅓ cup cannellini beans, lightly mashed

  • 2 tbsp dried tart cherries, chopped

  • 1 tbsp walnuts, chopped

  • 1 tbsp pumpkin seeds

  • Handful baby spinach

  • ½ tsp cinnamon

  • 1 tsp maple syrup

  • Pinch thyme

  • Salt & pepper

Method

Bake the sweet potato until soft and caramelised. In a small bowl, mix ricotta with maple syrup, cinnamon, thyme, salt and pepper. Fold through cherries. Warm the mashed cannellini beans and spinach in a pan until just softened. Split the sweet potato, layer in the beans & spinach, spoon over the cherry‑ricotta mixture, and finish with walnuts and pumpkin seeds.
