Blueberry Chocolate Nut Bars

If you love a bit of crunch with your chocolate, these blueberry chocolate nut bars are for you. Almonds, walnuts and pistachios add fibre, plant variety and plenty of crunch, with bursts of blueberry and a layer of dark chocolate on top. They’re an easy homemade snack to prep ahead and keep in the fridge for when you fancy something sweet.

Makes 10 bars

Ingredients

  • 1 cup whole almonds
  • 1 cup walnuts, roughly chopped
  • ½ cup pistachios
  • 2 tbsp maple syrup
  • ¼ tsp salt
  • ¼ cup freeze-dried blueberries
  • 100 g dark chocolate, roughly chopped

Method

  1. Preheat oven to 160°C fan-forced. Line a small rectangular baking tin with baking paper.
  2. Add the almonds, walnuts and pistachios directly to the tin. Drizzle over the maple syrup and sprinkle with salt. Mix well until evenly coated.
  3. Spread into an even layer and bake for 12-15 minutes, stirring once halfway through, until golden and fragrant.
  4. Remove from the oven and press the warm nut mixture down firmly and evenly using the back of a spoon or spatula.
  5. Sprinkle the freeze-dried blueberries over the nuts.
  6. Scatter the dark chocolate evenly over the warm nut mixture. Leave for 2-3 minutes to soften, then spread the melted chocolate over the top using the back of a spoon or spatula.
  7. Refrigerate for at least 1 hour, or until completely set. Remove from the tin and cut into 10 bars.
