Hidden Veg Mac & Cheese

Stressful day leaving you little time to think about dinner? We've got the solution this week: family-friendly, hidden-veggies, and deliciously satisfying.

This Hidden Veggie Mac & Cheese sneaks in cauliflower and packs extra protein with silken tofu: a gut-friendly, comforting dinner the whole family will enjoy.

Ingredients (serves 4):

  • 250g pasta of your choice (wholemeal for extra fibre!)

  • 1 small cauliflower, chopped into florets

  • 1 cup silken tofu

  • ½ cup milk (dairy or alternative)

  • 1 tsp Dijon mustard

  • ½ tsp smoked paprika or nutmeg

  • Salt + pepper to taste

  • 1.5 cups shredded cheese 

Instructions:

  1. Cook pasta according to package instructions; drain and set aside.

  2. Steam cauliflower until tender. Blend cauliflower with silken tofu, milk, and spices until smooth and creamy.

  3. Stir in most of the cheese, reserving a handful for topping.

  4. Mix the sauce with the cooked pasta, transfer to a baking dish, sprinkle remaining cheese on top, and bake at 180°C/350°F for 10-15 minutes until golden and bubbly.

  5. Serve warm and enjoy a comforting, hidden-veggie meal with minimal stress.

Tip: A few fresh herbs or a light sprinkle of paprika on top adds extra flavour and adding a little garlic-infused oil can boost flavour for sensitive guts. For extra veggies, try pairing this dish with a side salad as well.
