Viral Loaded Sweet Potato
There are so many reasons we love this viral loaded sweet potato recipe. It’s warm, satisfying, easy to throw together and a great example of our Protein:Fibre Index in action.

Ingredients
Sweet Potato
- 1 medium sweet potato
TVP Taco Filling
- ¼ cup dry TVP (or use mince if you prefer)
- ¼ cup boiling vegetable stock
- ¼ small onion, finely diced
- ¼ tsp garlic powder
- ¼ tsp smoked paprika
- ¼ tsp cumin
Fresh Salsa
- 1 tomato, diced
- ¼ green capsicum, diced
- Squeeze of lime juice
- Fresh coriander, chopped
- Salt and pepper to taste
Toppings
- 2 tbsp grated cheese
- ¼ avocado, sliced
- extra squeeze of lime juice
Instructions
1. Cut the sweet potato in half and bake at 200 degrees Celsius for about 20 minutes or until tender.
2. Place TVP in a bowl and cover with the boiling stock. Leave for 5 minutes to rehydrate.
3. Heat a pan over medium heat and cook the onion until softened. Add garlic, smoked paprika, and cumin and cook for 30 seconds.
4. Add the rehydrated TVP. Cook for 5–10 minutes until the TVP is crispy.
5. Mix the salsa ingredients together in a small bowl.
6. Fluff the sweet potato flesh with a fork.Top with the TVP mixture, cheese, avocado, and fresh salsa.
