Brownie Muffins

Makes 8 muffins

Ingredients:

1.5 cups mixed nuts (we used Brazil, peanuts, almonds, & pistachios)

1 cup pitted dates (packed)

1/2 cup peanut butter

3 heaping tbsp raw cacao powder

Top layer:

4 tbsp cacao powder

4 tbsp vegetable oil

3 tbsp agave (or maple syrup)

2 tbsp Goji Berries

2 tbsp crushed pistachios

Instructions:

  1. Add the mixed nuts, large dates, peanut butter, and raw cacao to a high-speed blender or food processor and blend until the mixture is well combined.
  2. Transfer the mixture into a muffin tin lined with muffin cases then let sit in the refrigerator while you make the topping.
  3. In a small bowl, mix together the cacao powder, vegetable oil, and maple syrup to make the top layer. Add the topping to each muffin. Sprinkle the goji berries and crushed pistachios on top and then let sit in the fridge for 1 hour before enjoying.
