Mediterranean Bread
This homemade Mediterranean bread is a wholesome, nutrient-dense loaf designed to nourish your gut, body and brain. Made with a blend whole grains, seeds, and extra virgin olive oil, it's a great way to incorporate more Mediterranean-style eating into your day!
Makes 1 loaf.
Dry ingredients:

2 cups whole wheat flour

1 cup oat flour

1/2 cup ground flaxseed

1/4 cup chia seeds
-
1 tsp salt
-
2 tsp baking powder
Wet ingredients:

1 cup Greek yogurt or plain kefir
-
2 tbsp extra virgin olive oil
-
2 tbsp honey
-
3/4 cup warm water (adjust as needed)

1 tbsp white vinegar
Optional add-ins:

1 tbsp fresh rosemary, oregano, or thyme

1/4 cup chopped olives
-
2 tbsp pumpkin seeds
Instructions:

Preheat oven to 180°C / 350°F. Line a loaf tin with baking paper or lightly oil it.

In a large bowl, combine the flours, flaxseed, chia seeds, salt, and baking powder.

In another bowl, whisk together yogurt (or kefir), olive oil, honey, vinegar, and warm water.

Add wet to dry ingredients and stir until just combined but don’t over-mix. The dough should be thick but slightly sticky. Add a bit more flour or water as needed.

Transfer dough into your tin. Sprinkle seeds or herbs on top and press lightly.

Bake for 40–45 minutes, until golden brown and a skewer comes out clean.

Let it rest at least 30 minutes before slicing.
- For serving, try spreading with hummus, labneh, or tahini or toast the bread and top with avocado, sardines, or fermented veggies.
