One Pan Super Quick Chicken & Sweet Potato Hash

A go-to dinner for those nights when you are exhausted and want something quick, gut-friendly, and satisfying.
Ingredients (serves 1–2):

1 chicken breast, thinly sliced

1 small sweet potato, diced small
-
1 head of broccoli, chopped
-
1 handful spinach or other greens
-
1 garlic clove, minced
-
½ tsp turmeric
-
1 tsp extra virgin olive oil
-
1–2 tsp basil pesto (store-bought)

Optional: squeeze of lemon
Method:

Heat olive oil in a large pan over medium heat.

Add chicken slices and cook for 3–4 minutes until slightly golden.

Toss in diced sweet potato, garlic, and turmeric. Sauté for 8–10 minutes until chicken is cooked through and sweet potato is tender.

Stir in broccoli halfway through cooking, and spinach for the last 1–2 minutes.

Remove from heat and stir in pesto. Finish with a squeeze of lemon if desired.
