Beef & Lentil Bowl with Garlic Greens

Beef & Lentil Bowl with Garlic Greens
Ingredients (Serves 2–3)

250g lean ground beef

1 cup cooked green or brown lentils (rinsed and drained if canned)

1 tbsp olive oil or avocado oil

2 cups baby spinach or kale, chopped

1 clove garlic, minced

½ tsp turmeric

½ tsp cumin
-
Salt and black pepper to taste

½ avocado, sliced

Fresh lemon juice, for serving
- 1 cup cooked quinoa
Instructions

Heat half the oil in a skillet over medium heat. Add beef, season with salt, pepper, cumin, and turmeric. Cook until browned and cooked through (about 6–8 minutes).

Stir in the cooked lentils and cook for another 2–3 minutes to warm through.

In a separate pan, heat the remaining oil and add garlic. Sauté for 30 seconds, then add spinach or kale. Cook until wilted.

Divide the beef-lentil mix between bowls. Top with the garlic greens, avocado slices, and a squeeze of lemon juice. Serve with quinoa.
