Getting enough iron can be tricky, and it’s not just about how much you eat, but the type of iron and how you combine it. This beef & lentil bowl with garlic greens is such a great option. Beef provides heme iron, which your body absorbs more easily, while lentils add non-heme iron plus gut-supporting fibre. Pairing both with vitamin C-rich lemon and greens helps your body make the most of the iron in the meal.

It’s hearty enough to prep ahead for lunches, but simple enough for a weeknight dinner when you want something nourishing without spending forever in the kitchen.

Beef & Lentil Bowl with Garlic Greens

Ingredients (Serves 2-3)

  • 250g lean ground beef

  • 1 cup cooked green or brown lentils (rinsed and drained if canned)

  • 1 tbsp olive oil or avocado oil

  • 2 cups baby spinach or kale, chopped

  • 1 clove garlic, minced

  • ½ tsp turmeric

  • ½ tsp cumin

  • Salt and black pepper to taste

  • ½ avocado, sliced

  • Fresh lemon juice, for serving

  • 1 cup cooked quinoa

Instructions

  1. Heat half the oil in a skillet over medium heat. Add beef, season with salt, pepper, cumin, and turmeric. Cook until browned and cooked through (about 6-8 minutes).

  2. Stir in the cooked lentils and cook for another 2-3 minutes to warm through.

  3. In a separate pan, heat the remaining oil and add garlic. Sauté for 30 seconds, then add spinach or kale. Cook until wilted.

  4. Divide the beef-lentil mix between bowls. Top with the garlic greens, avocado slices, and a squeeze of lemon juice. Serve with quinoa.
