No-Bake Chocolate Weetbix Slice
This No-Bake Chocolate Weetbix Slice is a simple, satisfying snack that ticks all the boxes for women in perimenopause — especially when those 3pm cravings hit.
It’s loaded with prebiotic fibre and polyphenols to support your gut health, energy, and hormone balance — without the crash that comes from ultra-processed sweets.
And yes, it’s still a hit with the kids too (and totally lunchbox friendly — no nuts!).
You don’t even need the thin layer of dark chocolate on top… but let’s be honest — it does take it to the next level.
Some of the gut-loving ingredients inside include:

Wholegrains (from the weetbix)

Seeds (sunflower or a mix for variety)

Dried fruit – like dates, which contain fructans (a fermentable fibre your gut microbes love!)

Honey – a natural source of prebiotics

Dark chocolate – rich in polyphenols that may also have a prebiotic effect
It’s quick to prep, keeps well in the fridge or freezer, and makes a perfect addition to your snack rotation if you’re working on reducing bloating, improving mood and keeping your blood sugar steady in peri.
Ingredients
5 WEETBIX (you could sub for 80g or 1 cup of oats if your prefer)
1 cup pitted dates
1/2 cup sunflower seeds or mixed seeds to increase variety
1/2 cup desiccated coconut
4 TBSPNS cocoa
2 TBSPNS honey
2 TBSPNS water
40g melted dark chocolate (70%+) -optional (Try dark mint chocolate for an added taste sensation)
Method
1. Place all ingredients except the dark chocolate in a food processor and blitz until it makes a ball or is well combined.
2. Press it evenly into a small square or loaf tin.
3. OPTIONAL - melt the dark chocolate and spread a thin layer over the top.
4. Refrigerate for 2 hours and then slice.
Note: this slice freezes well
