No-Bake Chocolate Weetbix Slice

Our No-Bake Chocolate Weetbix Slice is a lunch-box favourite for the kids (and big kids!).  It is loaded with prebiotic fibre and polyphenols to boost your energy and nutrition. It is so easy and delicious, and tastes great even without the thin dark chocolate layer on top.

Prebiotic ingredients, include:

  • wholegrains

  • seeds

  • dried fruit (yes, dates contain fructans, a fermentable sugar that your gut bacteria love!)

  • honey

  • dark chocolate (rich in polyphenols which are also thought to have a prebiotic effect)

And, it’s the perfect bite-sized addition for a work snack or to add to school lunchboxes. (yes, it's nut free!)

Ingredients

5 WEETBIX (you could sub for 80g or 1 cup of oats if your prefer)

1 cup pitted dates

1/2 cup sunflower seeds or mixed seeds to increase variety

1/2 cup desiccated coconut

4 TBSPNS cocoa

2 TBSPNS honey

2 TBSPNS water

40g melted dark chocolate (70%+) -optional (Try dark mint chocolate for an added taste sensation)

Method

1. Place all ingredients except the dark chocolate in a food processor and blitz until it makes a ball or is well combined.

2. Press it evenly into a small square or loaf tin.

3. OPTIONAL - melt the dark chocolate and spread a thin layer over the top.

4. Refrigerate for 2 hours and then slice.

Note: this slice freezes well
